Mom’s Vegetable Soup

Ingredients needed: Beef Soup bone, 1 large onion (chopped) , 2 potatoes (finely chopped), 4 large carrots, 4 celery sticks, 1 cab if stewed tomatoes, 1 can of green beans, 1/2 head of cabbage, handful of rice and barley, 1 can of whole corn,  8 plus cups of water, salt and pepper optional

Put all ingredients in a large simmering pot and add as much water as you desire over the ingredients. Bring to a boil then lower heat to medium. Cook for 2 hours. Stir occasionally. After 2 hours is you desire to add a little more water than do so. Lower to a slow simmer for an additional hour. The longer you simmer on low – the yummier this soup will be. You can also be creative and add more of your own ingredients that you like. When you are ready to eat – add some oyster crackers on top. I also enjoy a little bit of mozzarella cheese. ~ Enjoy!

Cream of Broccoli Soup

Ingredients needed: 1 can of cream of celery soup, 3 cans of cream of potato soup, 1 bag of cubed ham, 1 1/2 to 2 cups of milk depending on the consistency desired, 1 bag of frozen broccoli

Mix first 4 ingredients and heat in a medium size pot. While heating them, boil broccoli until half done; drain and add to the soup.

Chicken Poppycosh

Ingredients needed: Boneless chicken breasts, large onion, butter, salt and pepper, Tomato Sauce (2) 12 ounce cans, Stewed tomatoes (2) 12 ounce cans, 1 large container of Sour Cream, Flour, Eggs.

Cut up boneless chicken breasts into small pieces. Fry in butter with chopped onion, add salt and pepper.

In a large stew pot add the tomato sauce, stewed tomatoes, and sour cream – cook on medium. When your chicken and onions are all done – add to this mixture. Stir well and cook on medium low.

Now it’s time to make some easy homemade dumplings.

Mix 1 cup of flour with 2 eggs. Mix together making  dough mixture. If you want more dumplings you can mix 2 cups of flour with 4 eggs. These dumplings are delicious.

Okay, now get yourself another large stew pot. Fill half way with water. Let the water boil. Once the water is boiling, use a teaspoon and drop the dough by teaspoonfuls into the boiling water. When the dumplings are done they will float to the top. Keep on dropping the dough into the water and as the dumplings float to the top scoop them up and out with a larger cooking spoon and put them into your other pot with the chicken mixture. Once you are all done making your dumplings and they are all in the pot with the chicken mixture, let the mixture cook for a couple of hours on medium low. The longer you simmer this mixture the more that the dumplings will absorb the sauce. – Totally Yummy! Enjoy!

White Bean and Ham Soup

Ingredients: 1 lb of white beans – Canellini or Great Northern, 2 quarts of water, 2-3 lbs of ham shanks (or cut up ham pieces – this is great if you made a ham the night before for dinner and you want to use the rest of your left over ham for this special soup), 1 cup diced onions, 2 cups chopped celery, 2/3 cup chopped carrots, 2 small cloves of garlic, Tabasco sauce (optional), salt and pepper, fresh parsley

1) Soak beans 2 hours in cold water

2) Put ham shanks (or pieces) in large pot and cover over with water, bring to a simmer for 1 hour, add chopped veggies and beans, simmer another hour until veggies are soft and ham meat pulls away from the bone.

3) Add several drops of Tabasco to taste (this is optional)

4) Add Salt and Pepper with a pinch of parsley.

Enjoy!

Bread Pudding Recipe

Ingredients: 2 cups whole milk (or 2 cups half and half),  1/4 cup butter, 2/3 cup brown sugar, 3 eggs, 2 tsp cinnamon, 1/4 tsp nutmeg, 1 tsp vanilla extract, 3 cups bread (torn into small pieces – french bread works best), 1/2 cup raisins

1) In medium saucepan, over medium heat, heat milk until a film forms over the top. Combine butter with milk – stirring until butter is melted. Cool to lukewarm.

2) Combine brown sugar, eggs, cinnamon, nutmeg and vanilla. Beat with an electric mixer or hand whip, for 1 minute until mixed completely. Slowly add milk mixture.

3) Place bread into a lightly greased 1 1/2 quart casserole dish

4) Sprinkle with raisins if desired. Pour mixture over top of bread. Lightly mix until the all of the bread is completely covered with mixture.

5) Bake at 350 degrees for 45 to 50 minutes – serve warm

Special topping sauce optional but truly yummy…

1 cup milk, 2 tbs of butter, 1/2 cup sugar, 1 tsp vanilla, 1 tbsp flour, dash of salt. – Mix together and boil 3 to 4 minutes. Keep stirring until mixture turns into a pudding texture. When complete – pour over baked bread pudding. Enjoy!

Yummy Homemade Sloppy Joe recipe

4 lbs ground chuck, 1 cup celery, 1/2 cup onion, 2 tablespoons of Worcestershire sauce, 2 tablespoons of dry mustard, 1/2 cup brown sugar, 1/4 cup vinegar, 2 1/2 cups of ketchup, 1 tablespoon salt

Fry up the ground chuck (drain grease), set aside. Take the celery and the onion, put in sauce pan, add water to cover – put on high heat and bring to a boil, then low the heat and simmer until most of the water has evaporated and the celery and onions are soft (cover), next step…in a large kettle pot put the ground beef, celery and onion, add in the rest of the ingredients and simmer on low, stir occasionally – get some yummy buns and get ready for a real treat! Enjoy!

Thank you for that. I was trying to find a hearty stew recipe to help me get through the winter time, and this sounds just what I wanted. I found an entire stew recipes site here too that seems to have loads of good ideas, maybe you can get some more inspiration there. Anyway, thanks, I will bookmark and read more another time 😉
